Sparkling wines

Natural sparkling wine develops its own carbon dioxide during natural fermentation in the bottle. The best known sparkling wine is Champagne, named after the Champagne region of France. The name Champagne is today legally protected and reserved exclusively for sparkling wines made by the methodé Champenoise in this French province. Sparkling wines produced in other provinces and countries may be labeled only as sparkling wines (Mousseux or Crémant). Based on the amount of the remainder of unfermented sugar, sparkling wines are produced in a scale from completely dry (ultra brut) to sweet (doux).
